Creamy Tomato and Basil Soup
Wow! Last night Brooke and I had the most amazing soup. It was great for two reasons: taste and time. Not only was this easily one of the best soups we've ever made, but it was so simple that anyone could do it. Trust me on this recipe, this is a great homemade tomato soup, and it definitely tops Campbell's.
Ingredients:
2 28oz. cans of whole tomatoes
1 cube chicken bouillon
1/2 cup water
12-15 basil leaves or appox. 2-3 tbsp of dried basil
1/2 pint heavy whipping cream
1 stick of unsalted butter
1/4 tsp black pepper
Cooking Instructions:
Combine the tomatoes along with the juices in a large saucepan with the water and bouillon and simmer for about 30 minutes. Then, add the basil and puree. Add the cream and butter while stirring until the butter is melted. Add black pepper and serve. That's it. I told you it was easy. I also added a few shakes of cayenne pepper as well for a little added kick. Grab some fresh bread to go with this soup. You can also try cooking a little orzo pasta on the side and adding a few spoonfuls of that to each bowl of soup.
